Yes I know making Shrikhand needs hanging curd overnight and then processing it further. Well not if you are making it my way the instant Shrikhand, actually as you know for me long processes are not very encouraging, but at the same time I don’t want to miss the fun. To tell you the truth I have been planning to hang the curd overnight and make Elaichi (green cardamom) shrikhand for more than a month now, but I never remember before going to bed about my shrikhand plans.
Today morning I was wanting to have this delicious smooth chilled sweet and remembered I had enough yogurt/curd in fridge, thought of a plan and started acting on it. I strained the thick part of the yogurt in a thick mesh strainer and then transferred it to a kitchen towel. Hung it for an hour while I was doing some other kitchen stuff. After and hour I used my muscles and squeezed some more water manually and there it was my instant hung curd for the lovely Elaichi Shrikhand.
All I needed to do now was mix the ingredient and chill and enjoy this super simple yet amazingly rich and flavorful dessert. This version of Instant Shrikhand uses an interesting ingredient Sweetened condensed milk. How did I think of it ? Well I had a half used can in my fridge, and thought it is just the right time to use it. This sweetened condensed milk multiplies the richness and smoothness of my instant shrikhand. You may by all means use powdered sugar in case you don’t have sweetened condensed milk, but you won’t know the difference until you try it, trust me this tastes divine.
Now this is an instant Shrikhand recipe the whole process from hanging the curd to tasting the Shrikhand takes 1hr 30 mins max, but in case you use store bought thick yogurt you might even decrease the curd hanging time or may be just squeeze all the whey with hands in 3-5 minutes.

- Yogurt: 1.5 cups
- Sweetened Condensed Milk:4-5 tbsp(chilled)
- Elaichi Powder: 1/4 tsp
- Strain thick yogurt uing a thick meshed strainer
- Transfer into a kitchen cloth, tie and hang for an hour (I hung it on my kitchen tap). Squeeze excess water.
- Transfer in to a mixing bowl , add 4 heaped tbsp of sweetened condensed milk and elaichi powder, mix well with a whisk.
- Taste and add more condensed milk if needed to adjust sweetness.
- Mix well till smooth, transfer in the serving bowl and chill for 20 minutes before serving.
By the way while I am finishing this post I am enjoying this lovely Instant Elaichi Shrikhand and I must say every spoon is making me love myself for this recipe.
