I am definitely not a fruit lover. In fact my fruits can rest safely in my fridge for a long time before even being noticed (leave apart eating). But my husband likes them and knowing that they are very nutritious I try to give them to my son too. So I normally don’t easily consider making any fruit salad or dessert. No wonder I had never made fruit cream before this one. Though I have had it a few times earlier and I quite liked it.
But the recipe was pretty obvious and I didn’t consider trying it, until I found this recipe for grape salad which was a mix of sour cream and cream cheese, nuts and sugar. I liked the Idea and adapted it for a fruit cream. I made it when I had some friends coming in for dinner they loved it in fact my friend asked for the recipe too.
It is a really a very quick no cooking recipe and you are sure to be pleased by the output. I am not a fan of too sweet desserts and that’s why the sour hint of sour cream and cream cheese was just right too balance it becoming too sweet.
Ingredients for the cream are not many but might not always be readily available so you might want to shop. Needless to say that you may use any fruits of your choice, just avoid the ones that are watery and try to maintain the same proportion. Also feed free to use the nuts of your choice if you are using softer ones like cashew and pecan or almonds you may use them as is but in case you are using almonds just roast them for a softer texture. Also I suggest making this recipe a night before or at least 6 hours in advance which will help the flavors to soak in and mature. I think that all I wanted you guys to know about the recipe before we get started with the recipe.
Recipe for Fruit cream which is not just fruit cream
Yield: 4-6 people
Apple chopped:1/2 cup
Green Grapes halved:1/2 cup
Black Grapes halved:1/2 cup
Strawberries cut: 1/2 cup
Sweetened condensed milk: 1/2 cup
Whipping cream: 4-6 Tbsp
Cream cheese:1/4 cup
Sour cream: 4 Tbsp (Optional)*
Vanilla essence : 2 Tbsp
Coconut essence: 1 Tbsp (Optional)
Brown sugar-3-4 Tbsp
- In a mixing bowl add condensed milk, cream cheese, Sour cream and whipping cream and the essences, mix well to get a thick flavorful mix.
- In a bigger bowl add chopped fruits and gently mix with the prepared cream.
- Chop the nuts and mix in save some for the toppings.
- Top with brown sugar and nuts and put in the fridge for at lease 6 hours.
Note*: sour cream has a very special sour flavor and in case you are not a sour cream fan you may just omit it.
I just like what the coconut essence brings to this recipe but in case you don’t have some happily omit it.
